- 2-3 medium sized red onions, cut into ¼ inch thick slices
- 3 cups pickling vinegar (7%)
- 1 cup water
- 2 TBSP sugar
- 1 tsp fennel seed
- 1-2 tsp black peppercorns
- 1 TBSP kosher salt
- 2-3 wide mouth pint jars with lids & bands
Directions
- Start by preparing clean, sanitized mason jars.
- Stuff the jars with sliced red onions, packing them down lightly until the jar is half an inch from the top.
- In a medium saucepan, combine pickling vinegar, water, sugar, fennel seed, black peppercorns, and kosher salt.
- Heat the mixture until it reaches a boil, then let it simmer for at least 5 minutes to infuse the flavors.
- Pour the hot liquid over the packed onions, pressing the mixture down lightly with a fork.
- Seal the jars with lids and bands, then let them cool on the counter.
- Once cooled, transfer the jars to the refrigerator. The pickled onions will keep for at least 2 weeks.
